Busan, South Korea's bustling seaside city, is fast becoming a culinary hotspot, now highlighted by the Michelin Guide. The 2024 Seoul and Busan Michelin Guide has recognized 43 restaurants in Busan, with three earning prestigious stars, spotlighting the city's burgeoning fine dining scene.

Palate

Palate, led by Chef Kim Jaehoon, blends French culinary traditions with East Asian influences. Kim, a Busan native with experience honed in Sydney, chose Palate's location for its reminiscent view of Sydney's iconic landscapes. The restaurant's third-floor space offers stunning views of Gwangan Bridge and the local marina. The menu features innovative dishes like Korean white radish pie and chawanmushi, paired with traditional mushroom liquor cocktails. Kim's dedication to seasonal ingredients and creative risk-taking earned Palate its Michelin star, signaling a bright future for Busan's food culture.

Mori

Chef Kim Wan-gyu's Mori stands out among Busan's Japanese restaurants for its impeccable presentation and harmonious flavors. Located on Haeundae Beach, Mori offers ocean views that complement its seafood-centric menu. The restaurant operates without a set menu, instead crafting unique experiences based on seasonal availability and market conditions. This commitment to freshness and artistry helped Mori secure its Michelin star, making it a must-visit for those seeking exquisite Japanese cuisine.

Fiotto

Fiotto, a pasta-centric restaurant in Mipo, is celebrated for its commitment to quality and sustainability. Owned by Chef Lee Dong-ho and his wife, Fiotto is the only restaurant in Busan to earn both a Michelin star and a Green star. The latter acknowledges their minimal use of processed ingredients and dedication to a green cycle. Many ingredients come from the owners' family farm in North Gyeongsang Province, ensuring the freshest vegetables and locally sourced meats. Fiotto's farm-to-table approach and innovative fermentation techniques have captured Michelin's attention, highlighting their unique contribution to Busan's dining scene.

A Culinary Beacon

Busan's recognition by the Michelin Guide is a testament to the city's culinary evolution. The blend of fresh local ingredients, talented chefs, and stunning coastal views creates an exceptional dining experience. The Michelin stars awarded to Palate, Mori, and Fiotto underscore Busan's potential to become a world-renowned gastronomic destination.
