In a move that delights the palates of travelers, Cathay Pacific has taken its collaboration with the Michelin-starred restaurant Duddell's to new heights, introducing an exquisite "Hong Kong Flavours" menu. This latest offering is part of Cathay Pacific's ongoing effort to enrich its in-flight dining experience, especially for passengers in First and Business class on select long-haul flights departing from Hong Kong.
Since the partnership's successful inception in February 2023, both Cathay Pacific and Duddell's have been committed to showcasing the best of Cantonese and regional Chinese cuisine, coupled with classic comfort dishes. This initiative is a testament to Cathay Pacific's dedication to providing thoughtfully curated dining experiences, reflecting the airline's broader commitment to excellence in customer service.
Vivian Lo, Cathay Pacific's General Manager Customer Experience and Design, shared her enthusiasm about the partnership, emphasizing the aim to connect Hong Kong with the world through culinary creations. The meticulously crafted new inflight menus, she noted, are a testament to the shared passion for food and dedication to elevating Hong Kong’s culinary scene.
Yenn Wong, JIA Group's CEO, also expressed delight in continuing the partnership, highlighting the goal of presenting travelers with a taste of Hong Kong's flavors at 30,000 feet. The collaboration, dubbed "Chapter 2," promises new dishes and menus that will surely captivate passengers' taste buds.
The "Hong Kong Flavours" menu starts with an appetizer of crystal pork terrine with black vinegar, a specialty from Zhenjiang, China, for First class customers. Main course options include sautéed abalone and chicken with Sichuan pepper and crispy greens, as well as steamed cod fillets with Chinese ham and shiitake mushrooms. The meal rounds off with a black sesame tart with tofu ice cream, inspired by the traditional Chinese black sesame soup.
Business class passengers are not left out, with offerings such as Sichuan-style poached chicken with sesame and chilli sauce for starters. Main dishes include braised pork ribs with hawthorn sauce and green apples, and braised beef ribs with port wine, providing a perfect blend of tenderness and flavor. The dining experience concludes with a light and aromatic tofu pudding with red bean.
This culinary venture is part of Cathay Pacific's larger commitment to excellence, as the airline continues to connect people and cargo around the globe with its comprehensive fleet that includes HK Express and Air Hong Kong. Duddell's, a cultural and culinary gem in the heart of Hong Kong, remains a pivotal partner in bringing authentic local cuisine to the skies, further solidifying Cathay Pacific's role in promoting Hong Kong's rich culinary heritage on a global stage.
